Welsh Rabbit (Rarebit)- Adapted from Saveur


This is a quick easy meal which can be meat free although we used some leftover ham in it.
In a sauce pan mix, 3 1/2 C grated cheddar cheese (don't skimp here, use a good, sharp, aged cheddar), 1/4C beer or ale, 2T butter, 2t Worcestershire sauce, 1/2t kosher salt, 1/2t dry mustard.  Heat the mixture over medium until a smooth sauce is formed.  We served it on toasted sourdough bread with thinly sliced onion, tomato and the afore mentioned ham.  A green salad would go nicely too.  Serve beer or a dry white wine with this dish.

Seared Tuna with Lemon Caper Butter Sauce


This is a fairly easy dinner done on the stove rather than the grill because we wanted to make a pan sauce.  We had some good Ahi Tuna steaks which we seared in a hot saute pan with 2T olive oil.  Remove the fish and deglaze the pan with 1C dry white wine.  Reduce the wine by 1/2 then add 1 small clove of minced garlic, 2T chopped capers ( we used salt packed ones which had been rinsed), and 2T fresh lemon juice.  Heat briefly to soften the garlic and warm the capers.  Serve over the fish.  The peapods were simply steamed in the microwave for 1 min.
