Mussels with Cannellini Beans and Chorizo Sausage - Adapted from Food and Wine

Here's a delicious meal that goes together very quickly (Food and Wine says 7 took us a bit longer than that).  Start by browning 1/2 lb of chorizo or some other spicy sausage in a large covered pan.  Add 2 cloves of minced garlic...don't burn the garlic.  Drain off and fat that is rendered and add cayenne pepper to taste, 1t salt, 1-14 oz can of beans, 1C quartered cherry tomatoes, 1/2C white wine and 1lb of mussels that have been scrubbed clean.  Cover and simmer for a few minutes until the mussels have opened.  Serve with a nice crusty bread to soak up all the juice created.
