Garlic Shrimp with White Beans -Adapted from Bon Appetit, perhaps
In an oven-proof saute pan, heat 2T of olive oil and saute 1 Serrano chili which has been seeded and deveined. Add 2 cloves of minced garlic and saute until fragrant. Add 1 1/4C diced tomatoes (we used fresh but you could use canned) and cook until soft (smash them as they cook). Add salt and pepper to taste along with 1T tomato paste, 1- 14 oz can of white beans such as great northern or navy or the like, and 1C chicken stock. Simmer for 5-10 min to thicken the liquid. Top with 1 lb. of peeled and deveined shrimp, raw. Place under the broiled until the shrimp are pink. Garnish with chopped parsley. Serve with a crusty bread and dry white wine. Excellent with the fresh shrimp we get down here in Georgia.
