Marinated Pork Chops with Spicy Szechuan Noodles - Adapted from Cindy Z
Here are the Costco pork chops again. This time we made an marinade by mixing 1/4C soy sauce, 2T fish sauce, 2T oyster sauce, 2T garlic chili paste and 3 cloves minced garlic. Mix well and place in a plastic bag with the chops (chicken would work as well). We grilled them on the Weber to an internal temperature of 140 F.
For the noodles, cook 1 lb. of your favorite noodles; we used Lomein. Mix together in a bowl 3T sesame oil, 1/4C soy sauce, 3T rice vinegar, hot chili oil to taste, 1 bunch thinly sliced green onions, 1/2 of a peeled, sliced and quartered English cucumber, 1T chopped fresh ginger, and 4 cloves minced garlic. If you want more heat, you can add red pepper flakes. Toss with the noodles and garnish with chopped fresh cilantro. We chilled the noodles while the chops were grilling. A very nice meal with a spicy edge. We enjoyed a chilled dry white wine with the meal.
